More Food! Vegetarian carbonara style sauce - mushroom and white wine

This was yummy, fresh and really filling! It really didn't take long so if you're someone who is looking for healthy fast food then most the food I will be posting will be perfect for you!

Ingredients to serve 2:

Pasta
Quark
1 red onion
5 large mushrooms
white wine
Vegetable stock

Avocado
Spinach
Rocket
Cucumber
Tomato
Goats Cheese

1) Put the pasta on to cook
2) Finely chop the mushrooms and onions
3) Add olive oil to a frying pan and add the mushrooms and onion
4) Stir and wait for them to go soft
5) Add a table spoon and a half of quark and a couple glugs of wine
6) Stir together - the consistency will be quite thick at this point
7) add some vegetable stock until it reaches the consistency you like
8) Let it simmer and reduce on a low heat
9) Chop up an avocado, tomato, and some cucumber
10) To two bowls/plates add half a handful of raw spinach and half a handful of rocket, then add the avocado, tomato and cucumber on top.
11) Flake some goats cheese on top and add a drizzle of olive oil.
12) drain and serve the pasta
13) Serve the sauce on top of the pasta, add salt and pepper and enjoy!

This was 100% made up as I went along and it just happened to turn out really well, so I thought I would share!
